Vinification : 100 % de-stemming without pressing.Vinification in vats thermostatically controlled by internal heat exchangers at 26 – 28 °C. 12 day fermentation. Malolactic fermentation done immediately after draining and completed by the end of November.
Maturing : Lightly filtered on a diatomic bed, then 5 months in barrels (1/2 hogsheads of 600 litres) in our caves.
