Situation : Terrace

Orientation : South

Altitude : 25 metres

Climate : Exceptional weather since the beginning of April.

Soil : Sand, gravel, very filtering soil.

Grape variety : 100 % cabernet franc (locally called «cabernet breton »)  grafted on a 3309 and 101/14 stock.

Average age of vines : 30 years, density 5000 plants/hectare.

Yield : 54 Hectolitres/hectare

Alcoolic degree 12°5

Harvesting : Mechanical, done on the 24th of September.

Vinification :  100 % destemming without pressing. Double sorting, manual and mechanical. Fermentation done with local yeasts over a period of 11 days.Vinification  in vats thermostatically controlled by internal heat exchangers at 24 – 26 °C. Malolactic fermentation done immediately after draining and completed by the end of November.

Maturing : Lightly filtered on a diatomic bed, matured traditionnally in tanks, then in barrels for a month (1/2 hogshead of 600 litres) . Bottled in March 2016.

Aging potential : 5 to 10 years depending on conservation conditions.
